Black Olive and Cheese Muffins
/Fruity flavored muffins are always a hit but there is something about a really good savory muffin that hits the spot. I thought I would share one of my favorites with you all. I'm not sure where this recipe came from. I have edited it a bit since it came into my hands but it has become my "go to" when I need something for a nice pot luck or get together.
You will need:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/4 cup sliced black olives (drained)
- 1 large egg
- 1 cup milk
- 1/4 cup sugar
- 1/4 cup margarine or butter (melted)
- 3/4 cup grated cheddar cheese
Directions
- Preheat oven to 400 degrees F. Then, lightly grease or line muffin tins with papers. This recipe makes roughly 12 regular sized muffins or 24 minis.
- In large bowl, blend flour, baking powder, salt and sliced black olives. Set aside.
- In a medium sized bowl, beat the egg until it is light colored and well blended. Beat in milk, sugar and melted butter. Stir in shredded cheddar cheese.
- Combine both the dry and wet ingredients until all ingredients are just moistened.
- Spoon batter into the muffin tins until each is about 3/4 full.
- Bake for 15-20 min (12-15 for mini muffins) or until wooden tooth pick come out clean from center of muffin.
- Let cool approx 5 minutes and serve warm.
