Black Olive and Cheese Muffins

Fruity flavored muffins are always a hit but there is something about a really good savory muffin that hits the spot. I thought I would share one of my favorites with you all. I'm not sure where this recipe came from. I have edited it a bit since it came into my hands but it has become my "go to" when I need something for a nice pot luck or get together.

You will need:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cup sliced black olives (drained)
  • 1 large egg
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 cup margarine or butter (melted)
  • 3/4 cup grated cheddar cheese

Directions

  1. Preheat oven to 400 degrees F. Then, lightly grease or line muffin tins with papers. This recipe makes roughly 12 regular sized muffins or 24 minis.
  2. In large bowl, blend flour, baking powder, salt and sliced black olives. Set aside.
  3. In a medium sized bowl, beat the egg until it is light colored and well blended. Beat in milk, sugar and melted butter. Stir in shredded cheddar cheese.
  4. Combine both the dry and wet ingredients until all ingredients are just moistened.
  5. Spoon batter into the muffin tins until each is about 3/4 full.
  6. Bake for 15-20 min (12-15 for mini muffins) or until wooden tooth pick come out clean from center of muffin.
  7. Let cool approx 5 minutes and serve warm.
